Hello,
my name is Peter Kanik and I was first introduced to maple syrup at a very young age by my neighbor in Black River NY.
He allowed me to ride on the trailer that held the canisters full of sap and I watched as they boiled the sap into syrup.
The next year, my mother bought a cook stove and a two-by-three foot pan.
She taught me how to tap the 100-year-old maple trees around our home.
That year we made 6 gallons of syrup.
Throughout the years, I've worked for various maple producers, learning the art of sugarmaking from the old timers.
In 1991, I began selling Pete's Sweets wholesale.
I am USDA Certified Organic; this certification has specific guidelines for the production and processing of organic maple syrup.
I look forward to the sugaring season every year because we never know what Mother Nature has in store for us and for the maple trees.
Every season is unique and has its own challenges, never having the same crop two years in a row.
